Once you choose your favorite pickled vegetable – okra, carrots, snap peas, etc. – this relish only takes about five minutes to come together. It’s a great way to add more vegetables to your summer meals.
1 cup of your favorite pickled vegetable (we love okra, carrots, snap peas, etc.)
1 tablespoon whole grain mustard
1 tablespoon Dijon mustard
½ cup fresh dill, chopped
½ cup fresh parsley, chopped
1 tablespoon sugar
Kosher salt and freshly ground pepper, to taste
