Ingredients

½ cup frozen, shredded hash browns

1 egg

2 tablespoons crumbled cheese, such as cheddar or feta 

Salt and pepper to taste

Instructions
  1. Coat an 8-ounce microwave-safe ramekin or small cereal bowl with olive oil cooking spray. Add potatoes. Microwave on high for one minute until hot. Season with salt and pepper. 
  2. Add egg and beat with a fork until blended. Microwave on high for 30 seconds. Stir. Microwave until the egg is almost set, 15 to 30 seconds longer.
  3. Top with cheese and enjoy!

Also works with 1/3 C dehydrated hashbrowns & 1/3 C water - micro for 30/30, let sit 5 min. then add egg as directed and cheese. Easy to fix, add whole wheat toast and fruit on the side for a complete meal.
