Use this green curry paste to make our Green Curry Salmon (pictured), or any of your favorite Thai green curry dishes.
1 stalk lemongrass, tough outer layers removed and discarded, roughly chopped
3 green Thai chilis, roughly chopped (adjust with different chilis or the amount to achieve desired heat/spice preference)
6 scallions, root ends and tough green tips trimmed, roughly chopped
3 tablespoons garlic, roughly chopped, about 6 cloves
1 thumb-size piece of peeled ginger or galangal, roughly chopped (about 1 tablespoon)
1/2 cup Thai or other basil
1/2 cup fresh cilantro leaves and stems
2 teaspoons ground cumin
2 teaspoons ground coriander
2 tablespoons fish sauce
2 teaspoons light brown sugar
Place ingredients in a food processor or blender and process until smooth.
