Ingredients

2 (14-ounce) cans broad beans (fava beans) in brine, rinsed

1 cup lemon juice

1 cup extra virgin olive oil

4 cloves of garlic, crushed

4 tablespoons parsley, chopped

Salt and pepper to taste

 

Instructions
  1. Put the broad beans in a salad bowl. Mix all the dressing ingredients together — lemon juice, olive oil, garlic, salt, pepper and parsley — and drizzle over the beans.
  2. Taste and adjust seasoning if desired. Serve warm with spring onions and Arabic bread.
