You can serve this delicious warm grain salad with a garnish of duck confit, as shown, to make a stunning luncheon dish.
2 pounds wheat berries ( such as Khorasan or spelt berries)
2 ½ quarts chicken or vegetable stock
1 tsp Kosher salt
2 Tbsp extra virgin olive oil
½ cup red onion, diced
2 cloves garlic, chopped
12 ounces mixed dried fruits (diced dried cranberries, apricots and black mission figs) or the same amount of any dried fruit
½ cup red wine vinegar
¾ cup water
3 Tbsp sugar
¼ cup olive oil
1 large red onion, julienne cut
3 cups acorn squash, small cubes
1 Tbsp fresh thyme, chopped
salt and pepper to taste
