Ingredients

15 ounces of refried beans

½ cup salsa

1 cup Greek yogurt

1 yellow onion, chopped

3 large garlic cloves, finely chopped

1 cup Mexican cheese blend

½ teaspoon cayenne pepper

½ teaspoon chili pepper

4 tablespoons cilantro, coarsely chopped

Salt and pepper to taste

Toppings

1 large or two small tomatoes, coarsely chopped

½ cup queso fresco

Garnish cilantro

Tortilla chips

Instructions

  1. Sauté onions and garlic in a pan over medium-high heat until translucent.
  2. Add refried beans, Greek Yogurt, cilantro, and spices. Mix until creamy.
  3. Transfer to a baking pan (if not oven-safe) and top with Mexican cheese blend and cilantro. Bake at 350°F for 10 minutes.
  4. Remove from oven, top with chopped tomatoes and queso fresco, and serve with tortilla chips.
