Make this refreshing onion and tomato salad when summer produce is at its peak. This spicy simple, and flavorful dish is the type of salad that can be found in Kenya.
2 tomatoes, diced
1 small red onion, diced
1 medium cucumber, thinly sliced
1 jalapeño pepper, diced and seeds removed
1 clove garlic, minced
3 tablespoons chopped fresh cilantro
Juice of 1 lime (about 2 tablespoons lime juice)
¼ cup olive oil
2 cloves garlic, minced
Juice of ½ lemon (about 2 tablespoons lemon juice)
2 tablespoons balsamic vinegar
1 tablespoon honey
Salt and fresh ground black pepper to taste

The dressing was a bit in the sweet side for me so I upped the lemon. Very fresh tasting salad. You may want to use smaller plum or campari tomatoes as this recipe otherwise yields a lot of salad.
