Herby Greek Greens Salad with Peanuts and Fennel

This simple side salad is inspired by Aglaia Kremezi, a Greek cookbook author and cooking teacher, who has helped lead Oldways Culinarias throughout Greece. Feel free to substitute whatever herbs might be growing near you.

Ingredients

3 tablespoons olive oil

2 tablespoons red wine vinegar

1/4 teaspoon pepper

¼ teaspoon salt

1 head romaine, chopped

½ cup watercress

4 scallions, sliced

1/4 cup mint, chopped

1 bulb fennel, thinly sliced

1/4 cup lightly salted peanuts

Instructions

  1. To make the dressing, whisk together the olive oil, vinegar, pepper, and salt in a small bowl.
  2. In a large mixing bowl, toss together the romaine, watercress, scallions, mint, fennel, and peanuts. Drizzle the dressing over the salad and toss to combine.
