This dish is a flavorful way to eat your leafy greens! It’s quick to put together—and even faster if you use frozen, chopped spinach in place of fresh.
10 ounces fresh spinach
1 medium potato
1 1/2 teaspoons vegetable oil
1/2 teaspoon cumin seeds
1/2 teaspoon salt
1/2 teaspoon turmeric
2 teaspoons ground coriander
1/2 teaspoon cayenne pepper (optional)
