A vibrant spread of grilled vegetables, skewers, and sauces arranged on a dark surface, showcasing colorful peppers, corn, and mushrooms.

We’ve talked about how to throw a heritage barbecue before – and considering all heritage diets are inherently plant-based, a meatless barbecue is the perfect next step.

Venn diagram highlighting African, Mediterranean, Latin American, and Asian diets, emphasizing their shared foundation of plant-based foods.Around the world, many – if not most – societies have traditionally relied heavily on plant foods. A plant-based diet can be an excellent source of all the necessary nutrients for good health, particularly when a wide variety of foods — including vegetables, fruits, nuts, seeds, whole grains, legumes, herbs and spices — are eaten each day.

Even for meat-eaters, taking at least one day a week to prepare an entirely plant-based meal is a great way to follow heritage eating patterns. Especially in the summer, when seasonal produce abounds, it’s the perfect time to make your plant-based meal into an occasion!

Give some of these barbecue dishes a try to share the joy of heritage cooking…

Plant-Based Patties

Two sesame-topped brown buns sandwich crispy patties layered with lettuce, radishes, and dill, served on parchment paper.Beef isn’t the only ingredient capable of becoming a delicious burger patty. From bulgur to beans, there are so many wonderful plant-based burger options waiting to be enjoyed…

Bulgur Black Bean Veggie Burger: Not only is this flavorful burger meatless, but it’s also packed with whole grain nutrition. The Lime-Cilantro Aioli is a great addition, but depending on the crowd, feel free to switch it up by topping it with a chipotle mayo or your favorite condiment.

Falafel Burger: This chickpea-based burger will take on a crispy consistency that will steal the show. Simply shape ready-made (or homemade!) falafel dough into a patty, cook until golden brown, and serve on a bun with lettuce, tomato, onion and your preferred sauce – we’d recommend tzatziki.

Millet Burgers with Olives, Sun-Dried Tomatoes, and Pecorino: For a strong taste of the Mediterranean, give this punchy burger recipe a try. These millet burgers can be made with any number of add-in ingredients. For an outdoor summer gathering, we love keeping the flavor palette in the realm of an Italian antipasto, but there are no wrong options!

Flavor-Packed Sides

From salads to dips, the sky’s the limit when it comes to keeping sides plant-based…

Bruschetta with Summer Squash and Peppers: In its simplest form, Italian bruschetta is made by toasting bread, rubbing it with garlic, and topping with extra virgin olive oil and salt. This recipe turns it up a notch with seasonal summer squash and some freshly grated Parmigiano Reggiano that will make it a crowd-pleaser.

Carrot Salad: Carrot salads have been having a moment recently, and it’s no wonder! Carrots bring wonderful micronutrients and crunch to the table. This particular carrot salad is flavored with garlic, citrus and spices. It’s the perfect, easy-to-whip-up appetizer or side dish!

Potato Salad with Cilantro Dressing: Some people say that a cookout is not complete without potato salad! Incorporate a taste of Latin America into your gathering with this unique version: made up of cucumbers, red pepper, green onions, tomatoes and zesty cilantro dressing.

Lime Guacamole: This traditional guacamole is light and clean: perfect for keeping guests refreshed.

Refreshments

Watermelon Granita drinkOutdoor gatherings like BBQs can get hot, and by the end of the evening, these extra-refreshing fruit-based desserts and beverages might be just the thing to keep everyone happy and hydrated…

Watermelon Granita: Granita is a fun, refreshing treat for hot days, and nothing hits the spot during the summer like watermelon. In this easy recipe, it’s paired with lemon to give it a bright flavor.

Prickly Pear Agua Fresca: Prickly pear cactus is a delicious Latin American Heritage ingredient and lends itself beautifully to refreshing fruity beverages like aguas frescas. The flesh of prickly pear cactus has a sweet, melon-like flavor and a vibrant magenta color that will make this treat a showstopper.

Passion Fruit and Guava Sorbet: Don’t shy away from combining fruit and spices. This African heritage dessert is especially refreshing and delicious on warmer days, and nutmeg, ginger and cinnamon add a lovely depth of flavor.
