Brighten up school days with these hummus, veggie and toasted walnut wraps. In addition to offering a tasty crunch, walnuts add plant-based omega-3 fatty acids.
1 (8-inch) whole grain tortilla
¼ cup hummus
¼ cup shredded lettuce (can substitute baby spinach leaves)
2 tablespoons chopped walnuts, toasted
2 tablespoons chopped, roasted red bell peppers from a jar
2 tablespoons coarsely shredded carrots
1 medium cucumber, peeled and sliced

We ended up adding some roasted squash and roasted carrots to add a layer of warmth, and it turned out quite lovely!
