In 2021, Oldways’ African Heritage and Health program hosted a virtual A Taste of African Heritage Open House, led by Sarah Anderson, where we invited our community to learn more about the program and how to teach the curriculum.
We also marked Black History Month with a powerful series of conversations and culinary celebrations with esteemed guests, Toni Tipton Martin, Chef Pierre Thiam, and newly appointed African Heritage and Health Ambassador, Glorya Fernandez. These conversations highlighted the depth, resilience, and global influence of African heritage foodways.
With African Heritage and Health Advisory Board member, James Beard Award-winning author of The Jemima Code and Jubilee, and the editor-in-chief of Cook’s Country, Toni Tipton-Martin, we enjoyed a thoughtful and engaging Q&A exploring food history, storytelling and the cultural significance of African Heritage cuisines. With celebrated chef and entrepreneur Pierre Thiam, we discussed the ancient grain fonio, Senegalese cuisine, and the African Heritage Diet. In the second half of this interview, Chef Pierre also demonstrated how to prepare a delicious beet and fonio salad recipe. His work continues to celebrate West African foodways. Check out his more recent cookbook, Simply West African: Easy Joyful Recipes for Every Kitchen. Watch interview and demo here.
With African Heritage and Health Ambassador and chef, Glorya Fernandez, we were guided through recipes inspired by the African Heritage Diet—Red Pepper Salad, Black Lentil Fritters, and Premium Greens. Watch here
As we look back, we honor this moment in Oldways history and the voices who helped shape and elevate our collective understanding of heritage diets.
