Tamarind Agua Fresca

Tamarind pods have a rich history in Latin American Heritage cuisine and lend a sweet and tangy flavor to this agua fresca beverage.

Ingredients

4 cups water

12 (sweet) tamarind pods

1 teaspoon agave (optional)

½ tablespoon lemon juice (yield from about ¼ lemon)

Instructions

  1. Remove the shells from the tamarind pods and place the tamarind pods in a pot. Add the water to the pot with the tamarind pods. Bring the water to a boil and let the tamarind pods simmer for about 10-15 minutes until they become soft.
  2. Once the tamarind pods have softened, remove the pot from heat. Using a strainer, separate the liquid from the tamarind pulp. Discard the seeds and any remaining fibers.
  3. If desired, add 1 teaspoon of agave to the tamarind liquid. Adjust the sweetness according to your taste preferences. Stir well to combine.
  4. Add the lemon juice to the tamarind mixture and stir to incorporate.
  5. Transfer the Tamarind Agua Fresca to a pitcher and chill in the refrigerator for at least 1 hour.  Serve chilled, over ice. Garnish with a slice of lemon if desired.
