Falafel Fritter Hummus Bowls

Use your favorite recipe to make your own falafel fritters for this recipe, or use store-bought as a shortcut. These bowls make an excellent vegetarian lunch.

Ingredients

8 pieces Falafel Fritters, or 3-ounce Falafel Dough formed into 1-ounce pucks, or use chickpeas and your favorite ingredients to create your own signature falafels or fritters.

3 cups mixed shredded cabbage

3 cups fresh shredded carrots

1 cup hummus

Tahini sauce

1 garlic clove, crushed

¼ cup tahini (sesame paste)

¼ cup lemon juice

½ cup water

Salt to taste

Instructions

  1. Remove falafel from freezer and arrange on a sheet pan lined with parchment paper. For a crispy fritter, pan fry in olive oil. For baking, brush fritters with oil for crispy exterior. Set convection oven to 375°F and cook for 23-25 minutes, or until golden brown and internal temperature is 165°F. Carefully remove fritters from oven. They should be crispy on the outside and bright green and cooked through in the middle.
  2. Combine mixed shredded cabbage and shredded carrots.
  3. Separately, combine the tahini sauce ingredients to make the tahini sauce for drizzling.
  4. Build your bowls by spreading hummus evenly around a bowl in a circular motion. Add ½ cup of combined shredded cabbage and carrots, place warm falafel fritters on top of mix, and drizzle with tahini sauce.
