Pattypan Squash with Herbs and Feta

Pattypan, also called scallop or button squash, grow in many sizes and vibrant colors. The flavor is mild, similar to zucchini, with a slightly firmer texture. Use pattypan or zucchini in this grilled squash recipe, which makes an excellent side dish at summer barbecues and potlucks.

Ingredients

  • 10 small, or 6-8 medium patty pan squash
  • 3 garlic cloves, divided
  • 2 tablespoons extra-virgin olive oil
  • Salt and pepper, to taste
  • â…“ cup torn basil or fresh herbs of your choice, divided
  •  â…“ cup of feta cheese, crumbled

Instructions

  1. Preheat a grill, grill pan, or broiler pan to medium-high heat. 
  2. Chop the squash into into 1-2 inch pieces. 
  3. In a medium mixing bowl, crush two of the garlic cloves with the olive oil, and sprinkle of salt and pepper. 
  4. Add the squash pieces to the bowl, tossing to coat in the garlic-olive oil micture, and toss in 1/2 of the torn basil.  Place the squash pieces on the pre-heated grill or grill pan. If cooking over a grill, use a grill pan, or a foil packet so that the squash does not fall through the grates. Cook for three minutes, then turn over the squash pieces. Cook about 10 minutes more, checking periodically to rotate the squash and ensure even cooking. 
  5. Remove the squash from the grill and place in a serving bowl. Top with the remaining basil, remaining garlic clove (crushed), and the crumbled geta. Serve.
