One New Med Recipe: Pear and Walnut Salad with Goat Cheese

Since pears poached in red wine with baby greens, topped with walnuts, goat cheese and fabulous vinaigrette make up one of my favorite salads to order in a restaurant, I decided it was time to make it myself.  Not being at home this week (away from my cookbooks) I looked online and found lots of interesting AND easy-to-make recipes that promise to be re-creations of this popular restaurant dish. The full re-creation will have to wait until I get back to Boston.  For this week in Naples, Florida – visiting a wonderful friend named Mouse, who eats very small portions – I decided to make things even more simple and just assemble the ingredients of my favorite salad.  It hit the spot.  Fruit (pear), vegetable (spinach), healthy fats (walnuts with lots of omega-3s) and a small amount of protein (goat cheese).  Good ingredients, good friends and good health. – Sara

Simple Pear, Walnut and Goat Cheese Salad

Serves 2

Baby spinach (as much as you want!)
1 ripe pear, peeled and sliced
¼ cup walnuts
1-2 ounces goat cheese

Arrange the ingredients on individual plates. Add vinaigrette if you like.
