Maple Walnut Cranberry Granola

Every cook needs a great recipe for homemade granola. This version is inspired by the flavors of New England, with pure maple syrup and dried cranberries to add a touch of sweetness.

Ingredients

1 ½ cups old-fashioned oats

½ cup oat bran, or hot oat bran cereal

½ cup sunflower seeds

1/4 cup olive oil

1/4  cup real maple syrup

1 teaspoon pure vanilla extract

¼ teaspoon cinnamon

Pinch of salt

Pinch of nutmeg

¾ cup walnut pieces

½ cup dried cranberries

Instructions

  1. Preheat the oven to 275°F
  2.  In a large mixing bowl, combine the oats, oat bran, and sunflower seeds.
  3. In a medium saucepan over medium heat, combine the olive oil, maple syrup, vanilla extract, cinnamon, salt, and nutmeg. Bring to a boil, then remove from the heat.
  4. Pour the olive oil and syrup mixture over the oats mixture. 
  5. Spread out evenly on a parchment-lined baking sheet. Bake for 20 minutes.
  6. Remove the granola from the oven. Add in the walnuts and dried cranberries, and return to the oven for a final 20 minutes.
