California Grilled Chicken Pita and Tzatziki

Take your taste buds on a Greek vacation with these delicious chicken burgers stuffed in pita pockets and topped with veggies, creamy fresh avocados, and homemade tzatziki.

Ingredients

Tzatziki

½ cup yogurt, non-fat

½ cup finely grated cucumber, finely grated

1 tablespoon fresh mint, chopped

1 clove garlic, minced

2 teaspoons lemon juice

Salt and pepper to taste

Grilled Chicken Pita

1 pound ground chicken breast

½ cup crumbled reduced-fat feta cheese (optional)

¼ cup red onion, minced

1 clove garlic, minced

1 teaspoon dried oregano

½ English cucumber sliced crosswise

1 avocado, ripe, seeded, peeled and sliced

1 cup grape tomatoes, halved

¼ cup red onion, thinly sliced

4 whole wheat pita bread

Salt and pepper to taste

Instructions

  1. Prepare the tzatziki by combining all ingredients. Mix well and set aside.
  2. In a large bowl, combine the chicken, crumbled feta (optional), minced red onion, minced garlic, oregano, salt, and pepper. Mix until well combined. Divide the mixture into equal portions, shaping each into 1/2-inch thick burgers. 
  3. Heat a grill pan over medium-high heat. Spray the grill pan with cooking spray. Add the burgers to the pan, cook 3-4 minutes, flip, and cook an additional 3-4 minutes until the burgers are cooked through completely.   
  4. Cut a strip off of each pita to create a pocket. Place one burger into each pita pocket. Top each with cucumber, red onion, avocado, grape tomatoes.
  5. Drizzle each with tzatziki. Serve.  

Serving Suggestion: Sprinkle with crumbled feta cheese and serve with Mediterranean Pasta Salad with Artichokes and Avocado.

    My family loved this dish. Very easy to prepare and quick. Liked the idea of cutting off just a strip at the top of a pita to neatly hold all of the ingredients. Loved all the fresh ingredients.
