Sauteed Spinach in Garlic

Greens are a huge part of the African Heritage Diet Pyramid. Garlic, lemon juice, and red pepper lend the perfect flavors to this nutrient-packed spinach sauté.

Ingredients: 

1 teaspoon extra-virgin olive oil
4 cloves garlic, minced
16oz bag frozen spinach
1 tablespoon lemon juice
1/4 teaspoon salt
1/4 teaspoon crushed red pepper
 

Instructions: 
  1. Heat oil in a pan over medium heat. Add garlic and cook until it begins to brown, 1 to 2 minutes.
  2. Add spinach and toss to coat. Cover and cook until wilted, about 3 minutes.
  3. Remove from the heat and add lemon juice, salt and crushed red pepper. Toss to coat and serve immediately.
