Ingredients
1 medium whole wheat pita bread, cut in half
2 tablespoons Mediterranean Garlic Sauce (recipe follows)
4 falafel balls
1 medium tomato, sliced
Several slices Pickled Red Onion (recipe follows)
Several lettuce leaves
Mediterranean Garlic Sauce
1 cup plain Greek yogurt
2 cloves garlic, minced
Juice of ½ lemon
2 teaspoons extra-virgin olive oil
Salt and pepper to taste
Pickled Red Onions
¾ cup white vinegar
1 tablespoon brown sugar
½ teaspoon ground red pepper
Salt and pepper to taste
1 red onion, sliced into very thin rings
Instructions
- Mediterranean Garlic Sauce: Combine all ingredients in a bowl and whisk until smooth.
- Pickled Red Onions: Combine the vinegar and brown sugar in a saucepan and bring to a boil. Add the remaining ingredients and simmer for several minutes, until the onions are soft. Spoon the onions and the sauce into a glass container and let sit for an hour before using.
- Sandwich: Open each pita and spread it lightly with about 1 tablespoon of sauce. Tuck in the remaining ingredients and drizzle with a bit more sauce if you wish.
