Falafel Panzanella

Traditionally, a panzanella salad is an Italian salad of juicy tomatoes and chopped, stale bread. In this version, we substitute torn pieces of baked falafel for the bread, creating a delicious Mediterranean mash-up dish.

Ingredients

4 medium-large tomatoes, chopped into bite-sized pieces

3 tablespoons olive oil

3 tablespoons red wine vinegar

1 red bell pepper, diced

1 cucumber, diced

1 batch of prepared, baked falafel (about 15 small patties), torn into large pieces

¼ cup chopped basil

Instructions

  1. In a large mixing bowl, toss together the tomatoes, olive oil, vinegar, bell pepper, and cucumber and toss until well combined.
  2. Just before serving, add the falafel and basil, toss well, then divide into 4 portions.
