This basic vinaigrette is a starting point for building any kind of salad dressing you can dream up. Add herbs and spices, try flavored oils and vinegars, replace vinegar with citrus juice, or experiment with different types of vinegar for endless variations. We’ve offered some variations below to get your creative juices flowing.
¼ cup cider or wine vinegar
½ cup extra-virgin olive oil
¼ teaspoon salt
Combine all ingredients in a jar with a tight fitting lid and shake until well blended.
Variations
Balsamic Vinaigrette: Use balsamic vinegar in place of cider or wine vinegar.
Herb Vinaigrette: Add 1 tablespoon fresh, chopped thyme, tarragon, or rosemary to the dressing.
Lemon Vinaigrette: Add the juice of 1-2 lemons.
Honey-Mustard Vinaigrette: Add 1-2 minced garlic cloves, 1 teaspoon Dijon mustard, and 1 teaspoon honey.

I tried this immediately after I read it. I really like it for the taste and simplicity. If I want the lemon alternative, am I substituting the cider vinegar I used for the lemon or am I simply adding the lemon to the cider vinegar and olive oil?
Hi Mike, try adding the lemon in addition to the vinegar, as long as you like the flavor!
Thank you Hannah for responding. I have spent so much money on salad dressings over the years and this is certainly economical and tasty ! I will try adding the lemon juice to see if I like it. If not, the basic recipe given is FANTASTIC as is !
Use this almost daily changing out seasoning to fit entree.
