There are many wonderful traditional cheeses – some made with raw/unpasteurized milk, others produced with pasteurized milk. To start exploring the world of traditional cheeses, we’ve chosen to highlight two classic traditional cheeses made with raw/unpasteurized milk: Le Gruyère AOP and Parmigiano Reggiano. As you’ll read below, both Le Gruyère AOP and Parmigiano Reggiano are produced in specific places, using prescribed production methods and are essential to the local agricultural communities and economies.
