Ingredients
3 tablespoons olive oil
2 tablespoons red wine vinegar
¼ teaspoon pepper
¼ teaspoon salt
1 head romaine, chopped
½ cup watercress
4 scallions, sliced
¼ cup mint, chopped
1 bulb fennel, thinly sliced
¼ cup lightly salted peanuts
Instructions
- To make the dressing, whisk together the olive oil, vinegar, pepper, and salt in a small bowl.
- In a large mixing bowl, toss together the romaine, watercress, scallions, mint, fennel, and peanuts. Drizzle the dressing over the salad and toss to combine.
