Pasta is a staple in the Mediterranean Diet, and an ancient food that has been nourishing, sustaining and captivating the people in this region as well as people all over the world for hundreds of years. In this session, Diane Welland, MS, RD will share why this beloved food has become so important to our culture, both nutritionally and socially. This session will also reveal the newest research around pasta related to diet quality, weight status and other health outcomes as well as pasta’s role in the 2020 US Dietary Guidelines and current and up-and-coming food trends. Attendees will learn how the traditional pasta making process impacts blood sugar response and how to teach clients how to create affordable healthy pasta recipes at home.
