Dovi is a peanut sauce enjoyed in stews throughout Zimbabwe, and can contain either meat, vegetables, or both. This recipe forgoes meat, and includes collard greens as the main ingredient. Tempeh is also added for protein and texture, but feel free to use your favorite protein.. This makes a great side dish, or can be a complete meal with added protein and a starch. Sadzas, like the Millet Sadza go great with this dish.
2 bunches collard greens (or other greens), stemmed, washed and cut into ribbons
2 tablespoons olive oil
½ large onion, thinly sliced
2 cloves garlic, minced
1-inch piece of ginger, minced
2 teaspoons turmeric powder
½ teaspoon crushed red pepper
2 tablespoons no-salt-added tomato paste
1 1/2 cups reduced sodium vegetable broth, divided
½ cup smooth peanut butter
8 ounces tempeh, cut into small cubes or crumbled
Salt to taste
