- Remove the shells from the tamarind pods and place the tamarind pods in a pot. Add the water to the pot with the tamarind pods. Bring the water to a boil and let the tamarind pods simmer for about 10-15 minutes until they become soft.
- Once the tamarind pods have softened, remove the pot from heat. Using a strainer, separate the liquid from the tamarind pulp. Discard the seeds and any remaining fibers.
- If desired, add 1 teaspoon of agave to the tamarind liquid. Adjust the sweetness according to your taste preferences. Stir well to combine.
- Add the lemon juice to the tamarind mixture and stir to incorporate.
- Transfer the Tamarind Agua Fresca to a pitcher and chill in the refrigerator for at least 1 hour. Serve chilled, over ice. Garnish with a slice of lemon if desired.
