- Carefully handle the prickly pears and make a shallow lengthwise cut along the skin of each prickly pear. Peel off the skin to expose the flesh. Cut the peeled prickly pears into chunks and place them in a strainer or cheesecloth to remove the seeds. Press the flesh through the strainer or squeeze the juice through the cheesecloth into a bowl. Discard the seeds.
- In a pitcher, combine the water with 2 tablespoons of honey. Stir well until the honey is fully dissolved in the water.
- Pour the strained prickly pear juice into the pitcher with the honey-water mixture. Stir gently to combine the ingredients.
- Place the pitcher in the refrigerator to chill for at least 1 hour. When ready to serve, give the Agua Fresca a final stir, then pour into glasses filled with ice. Garnish with a lemon wedge if desired.
