- In a double boiler, melt the dark chocolate and add the olive oil and orange liqueur.
- In a bowl of an electric mixer, beat together the egg yolks and ¼ cup of the sugar until the mixture becomes fluffy. Add the mixture into the chocolate and mix well.
- In a different bowl, beat together the egg whites with the rest of the sugar and the salt until the soft peaks form. Fold the egg whites and the orange zest into the chocolate mixture.

Divide the mousse into individual servings in small bowls or ramekins and store in the refrigerator until serving.
