8 wraps

2 cups shredded carrots

2 cups shredded lettuce or mesclun mix

2 cucumbers, diced

1 pint cherry tomatoes, chopped

1 jar roasted red peppers, drained and chopped

1 jar olives, drained, pitted and chopped

Dressing of your choice

8 whole wheat wrap breads

1 (8-ounce) container hummus or tzatziki

  1. Combine the carrots, lettuce, cucumbers, tomatoes, peppers, and olives in a large bowl and toss gently to combine. Add about ¼ cup of dressing, and toss again. Add a bit more dressing if you wish.
  2. Lay one wrap on your counter or on a cutting board, with the short edge parallel to the edge of your work surface.  Spread evenly with tzatzki or hummus. Arrange the salad mixture over about two-thirds of the wrap surface, leaving about three or four inches at the top uncovered. 
  3. Roll up tightly and repeat with the remaining wraps and fillings.
