Ingredients

1 pound fresh packed crab

1 cup grilled pineapple, diced

1 red pepper, diced

4 green onions, sliced

½ cup finely chopped cilantro

½ cup finely chopped mint

1 tablespoon lime zest

Lime juice

Olive oil

Pepper

2 Belgian endives, separated

4 ounces feta cheese, crumbled

1 avocado, diced

Instructions
  1. In a large bowl, gently toss together the crab, pineapple, red pepper, green onions, cilantro, mint, and lime zest. Drizzle with lime juice and olive oil. Season with pepper to taste.
  2. Spoon crab mixture into endive spears. Sprinkle with feta cheese and diced avocado.
