1 lb pasta (spaghetti, fettucine, cappelini, or other long pasta), preferably whole grain
1 lb fresh or frozen thawed shrimp, peeled and deveined
2 tablespoons extra virgin olive oil, divided
1 small white onion, minced
2 cloves of garlic, minced fine
¾ cup red wine (optional)
1 (28-ounce) can of plum tomatoes in juice (San Marzano are excellent)
2 teaspoons sugar
¼ cup fresh chopped basil
Salt to taste
½ cup grated Parmigiano-Reggiano cheese
