- Preheat oven to 350°F.
- Place the orange zest and water in saucepan and simmer over low heat for about 30 minutes or until peel is tender. Pour off all but ¼ cup of water and add the honey to the orange liquid and peel. Boil the mixture over low heat for about 15 minutes. Cool slightly. The syrup should thicken.
- Sift flour, baking powder and salt into a medium mixing bowl. Combine the milk with the orange syrup and add to dry ingredients. Mix well. Add the nuts. Pour the batter into a loaf pan, greased and lined with parchment paper.
- Bake for 45 minutes or until lightly browned and firm at the center.

1 ½ cups water
1 cup honey
2 ¾ cup whole wheat flour
4 teaspoons baking powder
1 teaspoon sea salt
1 cup low fat milk
¾ cup chopped walnuts, dredged in 1 teaspoon flour

1 loaf, 10 servings
