Meatless Mains for Med Month

One big change in the updated Mediterranean Diet Pyramid is the grouping of all plant foods (grains, vegetables, fruits, beans, nuts, legumes, herbs and spices) together.  The scientists made this change to emphasize the healthfulness of these plant foods, and to encourage meal planning around them.   Med Month in May is the perfect time to try going meatless one or two times a week by assembling a few salads and antipasti to make magnificent meatless mains! Try this one from Manfredini Enterprises:

Mushrooms Angelucci Appetizer Ingredients ¾ cup Marinara sauce 2 tablespoons olive oil ½ pound oyster mushrooms, washed and sliced ½ pound shiitake mushrooms, washed and sliced 1 garlic clove 1 shallot, chopped 5 leaves fresh basil, minced 2 tablespoons chopped black olives Pinch of salt and freshly ground pepper 2 tablespoons parsley, minced Preparation Heat the olive oil in large frying pan over medium heat. Sauté the mushrooms, garlic, shallot and basil until they begin to sweat, about 5 minutes. Add the marinara sauce to the pan along with the olives, salt and pepper. Simmer uncovered, until mushrooms are tender. Adjust the seasonings to your taste. Garnish with minced parsley and serve hot, accompanied by slices of fresh whole grain bread.
