Yogurt has been my go-to snack for years, and with good reason. Yogurt is a wonderful food — a real “old ways” food, since it has been made and enjoyed for over 4,500 years. Its sweet, creamy taste and texture satisﬁes my cravings, while providing calcium, protein, and healthy doses of “good” bacteria to help support my immune system. Yogurt is simply milk or cream that is cultured with active live cultures. It is these tiny cultures that are the key to many of yogurt’s health beneﬁts. Active live cultures are basically “good” bacteria that are necessary for the body to function at its best. These “good” bacteria prevent the growth of harmful bacteria that cause bacterial infections and diseases, as well as help gastrointestinal conditions such as constipation, lactose intolerance and Inﬂammatory Bowel Disease. Eating yogurt regularly can help restore your “good” bacteria levels. Enjoy this recipe below: Ambrosia Parfaits *Serves 4* Ingredients:
- 18 ounces of vanilla yogurt
- 1 can (8 ounces) crushed pineapple in juice, drained
- 2 cups whole grain cereal
- 1 banana, sliced
- 1 can (11 ounces) mandarin orange segments, drained
- ¼ cup ﬂaked coconut, toasted
- 4 fresh strawberries
- In a medium bowl, mix yogurt and pineapple. Place ¼ cup cereal into each parfait glass.
- Spoon 2 tablespoons yogurt mixture on top of cereal in each glass. Top each with ¼ cup cereal, then with ¼ of the banana slices.
- Spoon 2 tablespoons yogurt mixture onto banana in each glass. Top each with orange segments, and spoon remaining yogurt mixture over oranges. Sprinkle with coconut. Garnish with strawberries.
