1. The Man Who Gets it Dun
Dun Gifford, president of Oldways, leading founder of the Whole Grains Council and the Latino Nutrition Coalition, and a vastly experienced speaker on many aspects of food and diet, is a man who dreams the impossible and gets it done. His history weaves through the shipwrecked Andrea Dory, helping coordinate Bobby Kennedy's national presidential campaign and chatting with Julia Child about the finer points of a well stocked refrigerator.
2. The Woman on a Mission
Sara Baer-Sinnott is the charming and sweet muscle behind the Oldways organization, buzzing around the office--and the world-- facilitating the company's rise to a respected leader in food issues. She has a unending mental Rolodex of foodie friends including chefs, nutritionists, scientists and journalists all who welcome her kind smile, infectious laugh and overarching thoughtfulness. Instrumental to Oldways' continuing success, she takes Dun's ideas and wisdom and applies them to events and issues so that together, they create and make the Oldways vision.
3. The Oldways Table, Where We Dish on the Foodie World
The Oldways Table-- Published by Ten Speed Press in 2007 -- brings together more than fifteen years of groundbreaking work on the nutritional and culinary frontlines. The book, which reads like a "Who's Who" of the food world, focuses on the pleasures of a healthy table, uncovering the secrets of the great tastes, flavors, and preparations from many experts. Between its covers, it holds unique culinary treasures of some of the world's great cultures, and encourages everyone to share the joys of food and drink with family and friends.
4. Growing Population, Growing Danger
Latinos have been identified as the fastest growing "waistlines" of any demographic sub-group in the US. In 2000, 10.2 percent of all Latinos in America have been diagnosed with diabetes. This is the result of Latinos residing in the US who are faced with different food choices and activity levels to which they are accustomed.
Oldways also developed the Latin American Diet pyramid and the Latino Nutrition Coalition (LNC), which is dedicated to inspiring Latinos to improve or maintain their health through traditional foods and lifestyles. Virtually all diets and messages directed towards Latinos for weight loss and management have failed because the information hasn't been offered in a Latino "comfort zone" of familiarity with Latino language, food and/or culture. Camino Magico, a supermarket shopping program launched in 2007 speaks to Latinos in a familiar language and is dedicated to encouraging Latinos to recapture—or keep—their good health through traditional foods and lifestyles.
5. Mangia Mangia!
Soft pliant mozzarella, rich virgin olive oil, fresh basil, aromatic tomatoes, pungent garlic, fresh chewy bread, salty olives. The mouth salivates just thinking of the colors, flavors, and textures found in the Mediterranean Diet. Wash it down with a glass of earthy red wine, in the company of family and friends, and you have not only had a wonderful meal, but you have eaten in the same traditions Greeks and Italians have for the past few centuries. A hearty diet, rich in wholesome, savory foods, bright colors, and fresh seafood is celebrated for its close ties to history, tradition, and family.

Timeless Traditions - Oldways inception began over the course of a year as Dun traveled China and Italy, reflecting on the countries' many great food traditions.
Eat like a Queen but Look Like a Model - Sitting around sipping wine, eating fine cheese and succulent seafood. It is quite an indulgent, rich, lovely eating pattern and yet, it still manages to be good for you! Have your Cake and Eat it Too - If consumers forbid foods from their diets, they are more likely to crave that food.
