Skillet Shrimp

An Oldways Recipe

Here’s a very easy way to cook fresh shrimp. Serve over rice or let cool and add to a main course salad.

Ingredients: 

2 tablespoons extra-virgin olive oil
2 cloves garlic, chopped
1 onion, sliced
1 pound media shrimp (about 20), peeled
1 teaspoon dried thyme
Salt and freshly ground black pepper to taste

Instructions: 
  1. Heat the broiler. Arrange the oven rack so it is about 8 inches from the heat source.
  2. Heat the olive oil in a large cast iron or ovenproof skillet. Add the garlic and onion and cook over medium heat for about three minutes. 
  3. Add the shrimp, sprinkle with the thyme, season with salt and pepper, and toss gently to mix evenly.
  4. Place the pan under the broiler and cook for about 3 minutes; stir and cook for another 3 minutes, or until the shrimp are pink.
