Here’s a very easy way to cook fresh shrimp. Serve over rice or let cool and add to a main course salad.
2 tablespoons extra-virgin olive oil
2 cloves garlic, chopped
1 onion, sliced
1 pound media shrimp (about 20), peeled
1 teaspoon dried thyme
Salt and freshly ground black pepper to taste
- Heat the broiler. Arrange the oven rack so it is about 8 inches from the heat source.
- Heat the olive oil in a large cast iron or ovenproof skillet. Add the garlic and onion and cook over medium heat for about three minutes.
- Add the shrimp, sprinkle with the thyme, season with salt and pepper, and toss gently to mix evenly.
- Place the pan under the broiler and cook for about 3 minutes; stir and cook for another 3 minutes, or until the shrimp are pink.
