Devilled Shrimp and Mango Kebabs
This easy and flavorful kebab recipe is wonderful over rice or alongside a Latin-inspired salad. If using wood skewers, be sure to soak them in water for 15 minutes before putting on the shrimp and mango pieces.
Ingredients:
- 3 pounds large shrimp, shelled and deveined
- 1/4 cup olive oil
- 1 tablespoon grated, fresh ginger root
- 2 tablespoons Jerk Seasoning
- 2 ripe mangoes, cut into 1-inch cubes
Instructions:
- Combine oil, ginger, and Jerk Seasoning in a bowl. Add the shrimp and marinate for 4-6 hours, turning occasionally.
- Arrange shrimp and mangoes on each skewer alternating shrimp and mango pieces.
- Grill for 5-8 minutes, turning and basting until cooked.
