Devilled Shrimp and Mango Kebabs

This easy and flavorful kebab recipe is wonderful over rice or alongside a Latin-inspired salad. If using wood skewers, be sure to soak them in water for 15 minutes before putting on the shrimp and mango pieces.

Ingredients: 
  • 3 pounds large shrimp, shelled and deveined
  • 1/4 cup olive oil
  • 1 tablespoon grated, fresh ginger root
  • 2 tablespoons Jerk Seasoning
  • 2 ripe mangoes, cut into 1-inch cubes
Instructions: 
  1. Combine oil, ginger, and Jerk Seasoning in a bowl. Add the shrimp and marinate for 4-6 hours, turning occasionally.
  2. Arrange shrimp and mangoes on each skewer alternating shrimp and mango pieces.
  3. Grill for 5-8 minutes, turning and basting until cooked.
