1 cup seeded and diced tomatoes
1/2 cup firmly packed minced fresh cilantro
1 cup finely chopped red bell pepper (optional)
1 small head green cabbage, finely shredded
1/2 cup freshly squeezed lime juice
Salt, to taste

Instructions:
  1. Mix the tomatoes, cilantro, and red pepper in a bowl.
  2. Add the cabbage and toss.
  3. Add the lime juice and salt to taste at the last minute before serving to avoid wilting of the cabbage.
