Cashew Dressing

It’s easy to become addicted to this delicious dressing. Spoon it over greens, salads, and grain dishes in "ribbons."  You need a blender
for this; it won't get smooth enough in a food processor.


2 cups raw cashews
2 tablespoons apple cider vinegar
1 cup almond milk
1 teaspoon honey
1 garlic clove, chopped
1 teaspoon reduced-sodium soy sauce

  1. Put all the ingredients in a blender and blend until very smooth.This will take a minute or two.
  2. Turn off the machine several times and stir from  the bottom with a knife or  small spatula to make sure it all gets very well blended.  When it's done it will be completely smooth with no bits of nuts in it.
  3. Store tightly covered in the refrigerator for about a week. It will thicken as is sits. Thin as you wish with a bit more almond milk.
