It’s easy to become addicted to this delicious dressing. Spoon it over greens, salads, and grain dishes in "ribbons." You need a blender
for this; it won't get smooth enough in a food processor.
2 cups raw cashews
2 tablespoons apple cider vinegar
1 cup almond milk
1 teaspoon honey
1 garlic clove, chopped
1 teaspoon reduced-sodium soy sauce
- Put all the ingredients in a blender and blend until very smooth.This will take a minute or two.
- Turn off the machine several times and stir from the bottom with a knife or small spatula to make sure it all gets very well blended. When it's done it will be completely smooth with no bits of nuts in it.
- Store tightly covered in the refrigerator for about a week. It will thicken as is sits. Thin as you wish with a bit more almond milk.
