Black Bean, Lentil and Mango Salad
Here’s the perfect side dish to go with grilled veggies.
- 1/2 cup diced fresh mango
- 1 cup canned black beans, rinsed and drained
- 1/2 cup diced red bell pepper
- 1/2 cup cooked lentils
- 1 cup minced, seeded jalapeño pepper
- 1/4 cup minced red onion
- 2 tablespoons minced fresh cilantro
- 2 tablespoons lime juice
- 2 tablespoons orange juice
- 1/2 teaspoon sea salt
- 2 tablespoons garlic-infused extra-virgin olive oil
- Combine all the ingredients and mix well in serving bowl.
- Chill for 20 minutes and then bring to room temperature for 10 minutes before serving.
