Black Bean, Lentil and Mango Salad

Here’s the perfect side dish to go with grilled veggies.

Ingredients: 
  • 1/2 cup diced fresh mango
  • 1 cup canned black beans, rinsed and drained
  • 1/2 cup diced red bell pepper
  • 1/2 cup cooked lentils
  • 1 cup minced, seeded jalapeño pepper
  • 1/4 cup minced red onion
  • 2 tablespoons minced fresh cilantro
  • 2 tablespoons lime juice
  • 2 tablespoons orange juice
  • 1/2 teaspoon sea salt
  • 2 tablespoons garlic-infused extra-virgin olive oil
Instructions: 
  1. Combine all the ingredients and mix well in serving bowl.
  2. Chill for 20 minutes and then bring to room temperature for 10 minutes before serving.
