Seeing Red ... Pepper Spread!

There is a local café that I am obsessed with. It has the most amazing Mediterranean foods with flavors that sing the sweetest songs - from their aromatic spice blends, spinach falafel with beet tzatziki, spanakopita, skordalia, and of course their whipped red pepper feta spread. This spread is dreamy; eat atop a cracker or crostini, as your lunchtime sandwich condiment or tossed over whole grain pasta for dinner.  Last weekend I had a bit of time on my hands and decided to try making my own version and am so happy I did.  Now when I get a hankering I can just “whip’ up my own!

Whipped Red Pepper Feta Spread

Ingredients:
8 ounces feta cheese
1 jar (8 ounces) roasted red peppers
1 – 2 teaspoons of Aleppo pepper (depending on your heat preference)
2 tablespoons olive oil
3 garlic cloves

Directions:
Combine all ingredients in a Cuisinart or use an immersion blender.  Blend to desired consistency and serve. Enjoy!
